Carol's Almond Crackers

Oven Temperature: 
325 degrees F
Ingredients: 
  • 1 Cup Almond flour. Blanched almonds work great here.
  • 1 egg white
  • 1/4 tsp salt, garlic powder/granules, onion powder or whatever flavors you want!

(Note: many garlic powders and onion powders are made with starch - usually wheat. Check your ingredients on the side of the spice bottle. I would suggest using fresh ingredients only)

Instructions: 

1) Beat egg white a bit then add the flour and flavors of choice.

2) Place mix between 2 sheets or wax paper about the length of your cookie sheet. Start slow and roll out with a rolling pin to a thin thickness. Not too thin but you will learn what thickness as you do this more.

3) Carefully remove the top layer of wax paper. Place the other paper with rolled out dough onto a cookie sheet. At this time you can add spray oil to coat your sheet.

4) Lay the dough down and press lightly over the whole cookie sheet and carefully remove the wax paper. I find that pulling it very close to the dough itself leaves the dough on the sheet and not on the wax paper.

5) At this time you can add some sesame seeds and using a knife score into squares. Depending on thickness it can take anywhere from 10 min to 20. You want them lightly browned.

What I have learned...to add more flavor, add about 1-2 tsp olive oil or melted butter to the mix.

You can also use 1/2 cup of almond flour and 1/2 cup flaxmeal. Makes for yummy crackers also!

I always make a double or triple batch. They are so good!

I am making a batch with dry Italian herbs, a bit of dry basal, garlic and they smell wonderful!

If you don't have a rolling pin (I didn't for many years because I bought already rolled pie crust) just crumble little bits all around the cookie sheet.
